Full Circle Creamery produces several varieties of mozzarella. Our Mozzarella Curds and Fresh, Hand-Stretched Mozzarella, Low-Moisture Whole Milk Mozzarella and Smoked Mozzarella are now in stores and on menus throughout the Willamette Valley!
Full Circle Creamery is the only local cheesemaking company in Oregon to make Fresh Mozzarella the traditional way: cultured and hand stretched. This results in the dreamy texture and buttery flavor we associate with authentic Italian Mozzarella Balls. Our Fresh Mozzarella is great sliced for an appetizer plate or placed on top of pizza. Pair with apples for an afternoon snack. The Blue Goat in Amity, Handsome Pizza in Portland, and Maiale de Volo in Beaverton use this cheese on their wood-fired oven pizzas and the Jory at the Allison Inn melts in on flat bread. Incredible Edibles tops their pizzas for Salem Saturday Market attendees. Independence Hops’n Barrelhouse sports this awesome cheese in their Caprese Salad.
Mozzarella Curds are a style of cheese unique to Full Circle Creamery. They are made from the same batch as our Fresh Mozzarella. During the cheese making process, we save some of the curds to flavor and package in convenient resealable bags. Eat them on the go or savor them as a midnight snack. Pack them in lunches for a sure-to-eat treat.
For those who love to cook Italian style,try our Mozzarella Curds that are close to the “Best By” date in your favorite dish. This cheese browns nicely on top of pizzas. It melts into pastas and warm dishes wonderfully.

Low-Moisture Whole Milk Mozzarella
It’s pizza night! With our Low-Moisture Whole Milk Mozzarella you can bet it’s the best one you’ve ever made! Check out my own personal pizza crust recipe. Use your favorite seasonal vegetables and local, grass fed meat to make a super healthy supper! Red Hills Market uses this on all of their amazing wood-fired oven pizzas.
Our Smoked Mozzarella is also hand stretched but then molded into a block. It’s dryer than the Fresh Mozzarella and ages nicely. We naturally cold smoke this variety with Applewood. Slice on sandwiches or grate to top your pizza. Dundee Bistro uses this cheese on their Margareta Pizza.
